Working backwards from dinner: subtract the rest (40 minutes), then the roast hours - a four-hour bird for a 5 pm dinner goes in around 12:20 pm. The calculator does the subtraction so the clock math never happens mid-cooking.
How do I fit all the sides in one oven?
The rest window is the trick: forty minutes of turkey resting is a free oven, and sides at 45 minutes or less bake right into it. Longer bakes ride the last hour covered in foil; the stove covers mashed potatoes and gravy.
How long should the turkey rest?
Thirty to forty minutes under foil - long enough for the juices to settle and the oven to free up, short enough that carving still feels warm. It buys exactly the window the sides need.
What if my sides need more oven time than the rest?
